The Showstoppers
Homemade candy should have a wow factor, something
that sets it apart in a season of sweets. The twist in our
Salt and Pink Peppercorn Caramels,
left,
is obvious
before you even take a bite. There’s a universe of exotic
salts and peppers, so play with smoked salts or chile
peppers. For our
Drunken Sugarplums,
above,
the
twist is brandy. After soaking the dried plums in the
liquor, coat them in sweetened butter and dip them in
chocolate. These put the standard ground-fruit-and-nuts
version to shame. Traditional spices and a cap of
white chocolate turn our
Eggnog Marshmallows,
opposite right,
into something positively angelic. The
most immediate appeal of our
Mint Chocolate Slab,
opposite far right,
is the stunning presentation. Getting
there could hardly be easier—just melt the chocolate,
pour it over mint patties, and scatter candies on top. Let
guests cut off pieces, and serve with sparkling wine. It’s
an indulgent finish.
